In the early 90’s Miami-Dade County leaders had the vision to bring Miami International Airport into the 21st century and approved the Capital Improvement Program which encompasses the new North and South Terminals and, Central Terminal renovations that are all well under way. With this massive project, MIA created new Commercial opportunities for local and DBE companies to upgrade food & beverage and retail throughout MIA with local and National Brands. In 1999 Global Concessions who’s Chief Executive Officer  & President is Felipe A. Valls Jr. was fortunate to have been awarded the Contract as the 30% Local Food and Beverage Master Developer/Operator of Food and Beverage at MIA.

Global Concessions formed Global Miami JV with its DBE partners, Airport Concessions Group, Inc. owned by Christopher O. Descalzo & Dale Robinson and Gateway Airport Concessions, Inc. owned by Marie Louissaint & Beatrice Louissaint to operate all of the Food & Beverage locations in the contract.  Each partner is very active in the day-to-day operations of Global Miami JV, bringing ,expertise and together with a Team of capable, hard working employees and Managers are committed to providing the highest, best food quality and value at all of the company’s Local and National concepts at MIA. In the past three years, Global Miami JV has designed, constructed and has opened 15 new food and beverage facilities throughout the Main Terminal, existing Concourses and the North Terminal. Global Miami and HMS/Host, the other Food and Beverage operator at MIA can boast of together having consistently brought the average sales of Food and Beverage per enplaned passenger to the highest levels ever experienced at MIA.  In fiscal 2006, MIA’s Food and Beverage average of $5.48 per enplaned passenger is among the best performing airport in the US and probably the world in this category, far exceeding MIA projections year after year.
       
All of Global Miami JV restaurants enjoy the benefits of having access to The Valls Group central commissary that boasts a Federally Inspected meat/poultry/fish portion control plant, a 25,000 sq. ft. warehouse for all dry goods and a large bakery where all desserts and pastries are created from scratch daily exclusively for all of the company owned restaurants.  Global orders  from the central commissary daily and receives the consolidated orders in one company delivery truck every morning to our MIA commissary where all, cooking and baking is done 24 hours a day then delivered to each location throughout the airport as sales dictate.  Quality control during every facet of production, handling, cooking and baking ensures freshness and consistency of  all of the products served at our MIA operations.  Café Versailles, La Carreta Restaurant and our other operations enjoy a reputation of “must visit when in MIA” with passengers, visitors and airport employees who can’t wait to get their daily fixings of our “Cafecito, Cortadito, Pastelitos, Croquetas, Cuban Cuisine and other familiar National Brands”.
